More closely related to leeks, Elephant garlic produces wonderfully massive heads with a mild garlic taste. We have been working on selecting this variety for a number of years and finally got a very prolific harvest of consistently humungous heads. Cloves have a thick, easy to peel wrapping and can be eaten raw, roasted, or sautéed to your hearts desire. Although Elephant garlic is a leek it is still cultivated the same way as garlic where individual cloves are planted in fall and harvested the next season.  We have also heard they can be cultivated like a perennial and left in the ground forming clumps. Let us know if you try it!

We have come to love the long straight stalks or scapes they put up with large bloom head. We have used these in flower bouquets and of course they can be eaten as well.

Description

Growing instructions:

When you receive your package, inspect your order right away and contact us with any questions or concerns. Store in a cool, dark place until you are ready to plant. Not in the refrigerator.

How to grow:

Plant 2-4 weeks prior to ground freezing or prior to your coldest time of year. After breaking cloves apart (not peeling), plant cloves root end down (blunt end) 6-9″ apart with row 9″-12″ apart. On our farm we plant our garlic at 9″ apart, rows 9″ apart. Mulch with straw, leaves, or old hay going into the winter.

Harvest and curing

In most climates garlic will be ready early to mid July. Stop watering about 2 weeks prior to harvest. Garlic is ready to harvest when the bottom two sets of leaves are completely dry and when top 5-6 leaves are still 50% green. Pull garlic and hang in a well ventilated area to cure. Cure for 3-4 weeks until the tops are dry. Cut off roots and tops 1.5 ” above heads. Then store in a ventilated container in a cool dark place. Ideal conditions are between 55-65 degrees and 45-60% humidity.
