A long time favorite for its thin skin and exceptional flavor. The Ping Tung Long grows 10-12” long slender eggplants with thin, light purple skin, making it very easy to handle in the kitchen. This variety was originally from Ping Tung Taiwan. Fruits have a sweet flavor and tender texture. Plants are disease resistant, early maturing, and productive. This variety starts to produce early in the season and continues late into the fall, making it one of the higher yielding eggplant varieties. 70 days to maturity.

Our grower’s favorite way to use it is in eggplant and okra curry. Yum!
