42 Mexican amaranth has a distinct expression making it very ornamental. It has a variable display with many plants that are striped half magenta or pink and half bright green while some plumes are more marbled. The stalks are often distinctly striped all the way to the ground. It is a good producer of white seeds.

There are many uses for amaranth including: popping and using in cereal, boiling and using like rice, or even ground as a high protein alternative to flour.  

We acquired this variety from Seeds Savers Exchange who received it from William Ross (WA RO W) of the Good Seed Company who obtained it from an unknown SSE member. 90 days to maturity. SSE Accession # 100042.
