The little gem or rolet gem is a South African treasure! Very common there, these vining squash plants produce little round dark green-skinned fruits that can be picked at any stage. They are great picked young, steamed, and served with a little butter. Can be eaten with seeds, skin, and all. As they mature into winter squash they will develop a richer flavor and the skin will harden, creating its own biodegradable bowl. We like to harvest them a little earlier than most winter squash to preserve their smooth texture. At the mature size, we cut them in half, scoop out the seeds and then bake them with a savory or sweet filling.
