A rare variety of stem lettuce with burgundy red leaves from China. Grown for the crunchy swollen stems during the cooler months of the year. If you celebrate bitter flavors like those of escarole and endive then this vegetable is for you. A more substantive addition to the spring plate when greens reign supreme. Use cooked or raw, great in stir frys and salads. To prepare – harvest swollen stems and peel the tough skin back to the tender interior. We often soak in cool water before preparing if there is more bitterness than we like. We found the Red Mountain celtuce to have a more nutty flavor. Expand your palate and give it a try!
